We Have a Name!

So yesterday, I told you that my brother and his wife welcomed a beautiful, healthy baby girl into their family.  Last night I got the phone call from my brother that her name is Sophia Grace.  Majorly in love with the name.  I absolutely can't wait to meet her tomorrow!

Please tell me I'm not the only one who was almost late to work due to the royal wedding.  I am fascinated with the entire thing.  And can I just mention that when Prince William saw his bride and told her that she looked beautiful, my heart turned into a big ole' pile of mush?!  I'm a hopeless romantic, I swear! 

What did you think of her dress?  There are some people in my office who weren't a fan, but personally, I loved it.  Beautiful and classy.

When I came home last night I wasn't in the mood to eat something hot.  Chicken cutlet was on the menu, so I opted to throw my chicken into a huge salad and call it a meal.  My dressing of choice was bacon ranch and it took the salad to a whole other level.

Thankful Thursday!

Today, I'm thankful that my new niece was born!  I'm going to meet her on Saturday, and I can't wait!  My brother text messaged the family to let us know that mom and baby are doing great.  I'm so excited that I can't even think straight!

It's Gettin' Hot!

Happy Wednesday! I'm so happy that we are half way through the week.

For the past few days, the little guy has been having trouble sleeping.  He's congested, so he's been getting up a lot in the middle of the night and hasn't been napping well.  Last night, I'm happy to say that he slept from 10:00 until 6:00 this morning.  I'll take it!  I hope this means that he is on the mend, but more than likely, he's completely over tired.

The past few days, the temps have been gorgeous! Even though it's only April, the hubby and I have turned on the air conditioner specifically for the little guy. He's a sweat box!  For some reason, his room gets really hot at night, so in addition to the air conditioner being on, I also turned on his fan and his cool midst humidifier.  When he woke up this morning he still felt a little warm.  It's crazy!

These hotter than normal days have got me thinking that I can't wait until the summer. Sure, it's the season where I eat the most ice cream, but this year, I think it'll be different. I think I'll be indulging in lots and lots of banana soft serve!

This stuff hits the spot every time. I've got some ripe bananas sitting on the counter to be used for this very purpose. I can't wait!

Catching Up

Hey! Oh my goodness has work been insane lately! I normally have a pretty low stress job but over the last two weeks the stress has been adding up! I can't wait until the summer semester starts at my job - then I'll be complaining about how slow and boring it is. I guess you just can't win with me!

How was your weekend? Mine was pretty good. Yesterday we celebrated Easter by going to Church followed by brunch at my mother-in-law's after and dinner at my uncle's house. Even though they live an hour apart, it was nice to be able to see both sides of the family. I LOVE not having to choose who to see when it comes to holidays.

I feel like I have so much to say but not enough time to say it in. I promise I'll be back soon with a normal post.  Until then, let me leave you with two of my favorite pictures from Easter Sunday.

Sometimes You Just Want Both

Happy Wednesday! It's supposed to be 80 degrees in Philly today and I'm so excited! I love the warmer weather this time of year. It's perfect!

When I was younger, Fridays was leftover night. My mom would pull every leftover from dinner over the course of the week and we kids would have our pick of the many offerings on the table. I loved it and I know that it was an easy weeknight meal for my mom.

The other night, the hubby and I raided the fridge for leftovers and came up with chicken and broccoli and chicken cutlet. Winning combo in my opinion! I put a little a lot on my plate.



This made me one happy girl!

I love leftovers. They rock my world! My father-in-law, on the otherhand, will not go near leftovers. He wants something new to eat every single night of the week. Me? I think that's weird!

Therapeutic Cooking

I like to relax and take it easy on the weekends, but most times sometimes that doesn't happen.  Since the hubby and I both work on Saturdays (me only a few hours at a Weight Watchers meeting and him a more "serious" job), Sunday becomes the day in which all errands get done.  Wash, making lunches, cooking, cleaning....you name it and we're probably doing it.  We're working on changing up our hectic Sundays to resemble our family Sundays that we promised we'd have way back when.

It came as no surprise on Sunday that in the blink of an eye it was time for dinner.  The little guy was sleeping and I could feel the rumbling in my tummy.  The husband wanted something quick, like his omelets but I wasn't in the mood.  I wanted to do some therapeutic cooking and decided to make pasta and shortcut fresh rolls.  Sure, I'd made this a few weeks ago, but something about bread in the oven, a pot of gravy on the stove and noodles simmering away in boiling water was calling my name.  For once, I wanted to slow down and not rush the cooking process.  I wanted to enjoy it, to take it in and have a substantial meal that we could both enjoy.


Turns out right after I snapped this picture, the little guy woke up and craziness ensued. It's always fun trying to eat with a baby who doesn't want to be anywhere but in your arms! I'm relishing in these moments though - pretty soon he'll be squirming to get away from me while he's trying to play with his friends.

It was nice to kick back and relax, even if it was only for a few moments. I sure hope these therapeutic cooking moments enter my life more often.

I Need to Clean

Happy Monday!

How was your weekend? I can't believe how quickly mine went, but it was nice. The hubby and I were able to visit the children's consignment shop yesterday and walked away with a car seat for the home daycare woman and a bouncer for $55. Not too bad!

The hubby and I were talking this morning and we realized how messy the house has gotten.  It seems the second that we clean it, it gets just as messy a few days later. We have little to no time to clean by the time we get home from work and who wants to clean on the weekends?  My question to you, my lovely readers, is how/when do you find the time to clean? Do you clean your place all at once or do you break it up?   The hubby and I are looking for a good balance.  After all, isn't that what life is about?

Before we ran our errands yesterday, I sat down to an oldie but goodie lunch....spaghetti squash!



I love, love, love spaghetti squash and I had a huge one to use before it went bad. Never made one before? Here's one way to prepare it.

Now that my lunch break is over, I'm headed back to work!

Feelin' Fishy

I am SO incredibly happy that today is Friday. It feels like it's been such a long week.

Today, the hubby and I dropped off the little guy at the new home daycare. The result was a peaceful mind and heart for me and the hubby. The little guy was a tiny bit fussy when we dropped him off, but my best guess is that it's going to take some time for him to adjust.

Since it's a Friday during Lent, the hubby and I will be abstaining from meat today. Sidenote - can you believe that Easter is next week? Seriously, time is going by super fast!

Last year I remember cooking a ton of meatless dishes but this year I've bascially relied on tuna and cheese sandwiches to get me through Lent. Tonight, I'm super excited that the hubby is going to make some Tilapia (one of my favorite fish!)

I don't usually feel like eating fish a lot, but when the feeling strikes, I jump all over it :)

This weekend the hubby and I are hitting up a kid's consignment shop to see if we can score some things for him to bring with him to the home daycare. I've never been to a kid's conignment store before but I'm pretty excited!

Thankful Thursday

Happy Thursday!!

Thank you for all of your sweet comments on my last post.  It really means the world to me!  The little guy is getting better slowly but surely, which makes this momma so happy.

Today, I am thankful for answered prayers.

As you know, the hubby and I were having some issues with our daycare center.  We've been wanting to find someone or somewhere that we felt comfortable with, and that time has finally come.  The hubby and I were introduced to a woman in our neighborhood who runs an in-home daycare.  She came highly recommended from a woman that my mother-in-law works with.  I met her for the first time yesterday and instantly felt at ease.  The hubby is going to meet her tonight, and if he gets the same feeling I do, we'll be transitioning the little guy to her house.

There's nothing like a sense of calm in one's life to make you realize how long you've been frazzled.

Quite a Weekend

Happy Tuesday! 

Boy has it been quite the weekend.  On Thursday, I got a call from the little guy's daycare telling me that he was sick.  Wonderful.  I picked up my still smiling baby boy and took him home.  Luckily he had a doctor's appointment the same day.  The doctor confirmed that it was just a virus and that he would be better within the next few days.

Thursday night, guess who was up sick?  Yup, me.....and then the baby and then the hubby.  Don't you love how things travel through the pipeline?  While my hubby and I spent time getting better, the little guy got worse.  The hubby took him back to the doctor's office yesterday and she said that he now has a double ear infection.  Poor little guy.

Needless to say, I haven't been too focused on the food front.  Mommy first, blogger second, right? 

I'm taking the day off tomorrow to nurse the little guy back to health.  Hopefully he'll be better by Thursday.

Thankful Thursday

Happy Thursday! I'm more than happy to be almost done with this week! The little guy was up last night from about 4:15 until 5:00 when I fed him. Getting to bed at 12:00 meant 4 hours of sleep for me....yeah, not too thrilled with that!

Today, I'm thankful for it being Thursday. It's the day right before the weekend begins. I'm not gonna lie - it's been a rather stressful week between the daycare, the little guy and the husband. It seems we've all got things going on and none of us have gotten the sleep that we need. I'm looking forward to leaving work early today even though the it's because the little guy has a doctor's appointment.

Since I've been under some stress,I thought that I'd heal myself through laughter. I'm a huge fan of the website Toothpaste for Dinner. It's a daily comic that makes me crack up almost all the time. While browsing the archives today for something to make everyone smile, I stumbled across this gem....



It really made me smile today and I hope all my fellow food bloggers get a kick out of it!

Nature's Pride Hearty Wheat with Flax

Happy Wednesday! I'm so happy that we're halfway through the week and one step closer to the weekend. I can almost see it!

As part of Foodbuzz's Tastemaker Program, I was sent a loaf of Nature Pride's Hearty Wheat with Flax bread. I'm always up for samples, but I get especially excited when there's bread involved!


I've tried Nature's Pride bread before and have always been extremely pleased with their natural ingredients and fresh out of the oven taste.  This bread certainly did not disappoint and I would venture to say that it's probably on my list of top breads ever.

I love the size and texture of the bread. It's incredibly filling and tasty! In fact, the husband has been using this as his sandwich bread all this week and has been loving it.

Inside Out Pizza

Happy Tuesday!  Yesterday was incredibly crazy at work so I didn't have any time to blog.  I've got lots of blogs to catch up on!

My weekend went by incredibly fast (but don't they always?)  On Sunday, the hubby and I wanted something cheesy and yummy.  I wanted to make some homemade pizza but for some reason the dough wasn't cooperating with me.

Before I let my frustration get the best of me, I decided to make an inside out pizza.  All I did was use my basic stromboli recipe but instead of adding ham and cheese, I added pizza sauce, cheese, oregano and garlic powder.

After 20 minutes in the oven, I was greeted with lots of melty cheese.



Delicious!
This morning I woke up super sore from a circuit training class I took yesterday. Muscles that I didn't even know existed are throbbing. It's a good thing though, right? No pain, no gain!

Random fact of the day:

The husband and I couldn't figure out why the little guy would get so frustrated when we would lay him down on his activity gym to play. On a whim, I tried sitting him up and realized that he could do this.....
Look, mom! I can sit up all by myself!

New Snack Find

Happy Friday! It's so nice to be at the weekend already.  The little guy is feeling better and all is looking well.  This weekend the hubby and I aren't too busy, which makes me one happy chick.

Remember last week when I hinted about a new food find?  Well, my Uncle Joe introduced me to a really great snack - dry roasted edamame!

Lately, I've been eating frozen edamame by the bagfuls.  I didn't even know they made them dry roasted!  My grandmom said that they reminded her of the crunchiness of peanuts and I think that sums it up.  I've been grabbing handfuls of the edamame's while I'm making dinners, putzing around the kitchen, or when I'm in the mood for a snack.  They are delicious and nutritious too!
