Busy but Productive Weekend

Happy Monday!
Even though I didn't have anything planned to do this weekend, it still turned out busy but productive.  When I say busy, I mean that it was busy with things that the hubby and I needed to get done around the house (errands, cleaning, etc.) It was nice not to rush around here, there and everywhere.

On Saturday, I went to my Weight Watchers meeting and lost 0.6, which makes it 18 pounds total that I've lost since starting Weight Watchers again.  I'm excited!  This means I have 23.6 pounds left to lose until I am back to my pre-pregnancy weight and 32 pounds to go until I hit my goal weight.  Sweet!

After my meeting, I went to my mom's house to pick up the little guy.  A friend of mine bought him these sunglasses and I couldn't resist trying them on him.  He kept them on for a lot longer than I expected.

Once we got home, I tried feeding the little guy some rice cereal.  He was green lighted to start cereal last Wednesday, but each time I tried to feed it to him, he got an expression on his face that let me know how gross it tasted.  The doctor told me to perservere and try it for 5 days before concluding that he didn't like it.  Sunday marked the 5th day of him making the same face so the hubby and I tried oatmeal.  It worked much, much better.

On Sunday, we took advantage of the nice weather and went for a long walk.  It felt good to get outside and excercise a little bit.  The hubby was in charge of dinner, so he made his go-to food....scrambled eggs!

Is it just me or does food taste better when someone else makes it?  The hubby's eggs always come out so much better than mine!

Chicken and 'Shrooms

Happy Friday!  I'm so, so, so excited for the weekend.  This is the first weekend in a long time that the husband, baby and I have almost the entire weekend free.  Since our schedules have been crammed so much lately, we've decided to make Sundays our family day.  It's the one day all week that we can put away schedules and calendars and focus on our bond as a family.

On the food front, the hubby and I have been eating a lot of chicken.  Not surprising, right?  I made this simple but tasty dish using some canned mushrooms, onions and chicken.

I started by seasoning the chicken with pepper and putting it in a non-stick pan.  Next, I chopped up some onions and added a can of mushrooms.  I put the lid over the pan and let it steam away.

I'm sure this would work beautifully with fresh mushrooms but I didn't have any on hand.

A note about yesterday's post....a few people asked why my doctor didn't want me to do any exercise other than walking when I was pregnant.  I never questioned him on it (bad idea) but I can almost guess that his reasoning was because around 7-8 weeks into my pregnancy, I started spotting.  I think he wanted to play it "safe rather than sorry" and he told me to take it easy and rest for awhile.

Thankful Thursday

Happy Thursday!

When my company partnered with Great American Fitness a month ago, I was super excited.  As participants in the Great American Fitness Challenge, my co-workers and I were granted free gym access for a total of 60 days.  On my lunch hour, I've been going to the gym and loving every minute of it.  Today, I'm thankful for exercise.

It feels so great to get back into the exercise groove.  When I found out that I was preggers, the doctor told me the only exercise I could do was walk, and after the baby was born, I wasn't allowed to exercise for six weeks afterwards.  All of this inactivity led to a slump and sluggishness that I hope to never feel again.  If I ever get pregnant again, you can be sure that I'll definitely be exercising!

I love the way exercising makes me feel, both physically and mentally.  It gives me a sense of strength and peace.  I can't tell you how much it relieves stress and how happy I am after a sweat session.  After these 60 days of free gym membership are over, my co-workers and I have decided to keep up with regular exercising during lunch.  I'm super excited!

In a Meatloaf Mood

Happy Wednesday!  Did anyone happen to catch Glee last night?  I love, love, love that show.  It reminds me so much of high school that it's ridiculous!

It's strange how much I disliked meatloaf when I was younger.  I wasn't happy when it was meatloaf night at our house, and no matter how many different ways my mom tried to make it, I just wasn't a fan.  Fast forward 20 years or so and now I can't get enough of the stuff.

I've tried many variations of meatloaf, but my tried and true recipe is here.

Notice the baby's sterilizer in the background?  His stuff is slowly taking over the house!
If I could eat this every week, I would.  It's almost as yummy as pasta! (almost.....)

It's Not What It Looks Like

I'm a fan of eating all types of foods, even if they don't look very appetizing. 

Ever since trying the chicken sausages, I've been tempted to try other things besides my usual fare.  This week, it was turkey kielbasa.  I bet this would be even better if there were cooked onions and potatoes with it, but having a baby in the house makes cooking a little bit challenging. The hubby and I made sandwiches out of the kielbasa, but after looking at it on the plate, we both thought that by itself, it looked kind of funny.

I actually got more sleep last night than in the past three weeks and yet today, I'm more tired than usual.  Go figure.  You see, the baby has been in a pattern of "hey, I think I'm going to wake up at 4:00 and want to play."  Up until three weeks ago, he slept perfectly through the night.  After talking to our doctor, she suggested that we let him "cry it out" which translated to an hour and forty five minutes of him crying.  It was awful and something that I'm not so willing to do again.  I'm hoping that once he eats rice cereal (we only have to wait one more week!) he'll sleep better. This girl misses her sleep!

Leftovers and Weekend Fun

Happy Monday!

How was your weekend?  Even though it went by really fast, my weekend was a lot of fun.  Saturday, we celebrated my nephew's birthday.  He's very much into Thomas the Tank Engine right now, which is adorable.  After we sang Happy Birthday to him, he dove right into his cake.  I'd say this kid loves his icing!

My older brother (my nephew's father) has this 'thing' with Mike Schmidt.  He absolutely loves him.  I'm not quite sure why, but he's liked him since as far back as I can remember.  Since my nephew is in a 'repeating phase' where he repeats things that people say, I thought it would be the perfect opportunity for his aunt to teach him a new phrase.....'Mike Schmidt stinks.' 

Needless to say, my brother was not very happy, but it sure made for some laughs!

Now onto the food front....

What do you do when you have two different leftovers that have to be eaten?  You combine them, of course!

I took some turkey chili that I had leftover and added it to some leftover noodles.

 It was yummy!

Now I'm off to finish some work.  Even though today is President's Day, I'm stuck at work - lucky me!

Oh yes, one more thing - Happy birthday to my brother Eric!

Varying from the Norm

Happy Friday! Woo hoo!  I'm so happy that we are finally approaching the weekend.  This weekend my is my nephew's second birthday, and we're celebrating tomorrow.  It seems like he was just born yesterday.

When I look back on my meals both on the food blog and "off", I see how much of a patterned eater I am.  I'm definitely a chicken eater and a pasta eater.

When I saw some chicken sausages in the store, I knew it was time to switch up my normal routine.  I put some onions in a pan and let them cook until they were nice and wilted.  I added the chicken sausage and heated until they were cooked through.

This was such a nice change up from my normal routine.

Thankful Thursday

Happy Thursday!  Last night I came home to an empty house....the hubby and baby were no where to be found.  I took the opportunity to get my shower earlier than usual so that I could relax after dinner instead of running around to get random chores finished.

When they eventually came home, the hubby told me where he was.  Turns out he went to Target to buy me a new pair of pants.  I was pretty stoked because I still don't fit into my pre-pregnancy clothes, but I'm not willing to get an entire new wardrobe while I'm in this transitional phase.  Thanks, hubs!

After dinner, the baby and I crashed on the sofa.  When I say crash, I mean we both fell asleep from 7:40 until 10:00.  Oops!  The baby has been getting up a lot lately these last few days, so today, I'm thankful for sleep.

I'm thankful when he does this.....

Naps are such an amazing thing, both for baby and for me!

Picante Sauce

Happy Wednesday! 

I just love bloggers and blogging.  I am constantly amazed at how friendly, thoughtful and kind other bloggers and blog readers are to one another.  Yesterday I came home to the sweetest package from adorable reusable grocery bag and the chance to go out to lunch.  Run over and check out her blog if you haven't already....she's one of the coolest bloggers I "know". 

A few weeks ago I received some free Pace Picante Sauce as part of the Foodbuzz Tastemaker Program.  The first time I tried this kind of sauce, I made some Texas Two Step Chicken.  This time around, I wanted to try something different, however, my creative juices weren't flowing.  In an effort to throw dinner together as fast as possible, I ended up using this....

as a topping for this.....

1 Tablespoon of light mayo topped with picante sauce.  Weird, but tasty!


Perfectly spicy and creamy at the same time.

A Little Too Late

Hello friends!

It's no secret that I love pizza.  I can't tell you the last time that I've had takeout pizza.....wait a second....I think I can.  It was right after the baby came home from the hospital.  Even though my family ordered pizza once a week when I was younger, I prefer making my own pizza at home.  There's something about knowing exactly what's going into it that makes the pizza taste much better.

I started with some whole wheat dough and added some turkey pepperoni, cheese and marinara sauce.

I put the pizza in the oven and went over to talk to the husband.  I set the oven timer, and after twenty minutes, I checked on my pizza and was met with this.......

Oops.  Looks like I should've relied on my instincts rather than the oven timer.  Even though it was extra crispy, the husband said it wasn't so bad.  Me?  I wasn't a fan in the least.  Oh well, you win some you lose some, right?

Believe it or not, I'm not a fan of Valentine's Day at all.  I mean, yeah, it's nice to give or get flowers and chocolates but do we need a special day out of the year to tell the people we love that we love them?

Thankful Thursday!

Happy Thursday! Hooray for being one day closer to the weekend!

I can't believe that I'm actually admitting this, but last night, the hubby and I watched Sanford & Sons.  You see, there's kind of a back story that goes along with the Sanford & Sons thing.

The hubby hates television.  When I say hates, I mean he really hates watching it.  He's not a sports guy, not a fan of the news or most sitcoms.  Quite frankly, he'd rather spend his time doing something 'productive'.  The guy didn't even own a TV when I met him. 

On the other hand, I don't mind TV once in a while.  I like watching it after I come home from work and need to unwind for a bit.  Most of it is mindless, and while it's not the greatest habit in the world, it's certainly not the worst. 

Since we try to save money where we can, we decided not to get cable in our house.  It doesn't make any sense for us to pay money for something that we'd hardly use.  The other day, I came across something called Antenna TV.  It broadcasts all of the old TV shoes like Gidget, The Flying Nun, Good Times, Married With Children (hey, when did that become an old show?), Sanford & get the idea.

When the husband saw that Sanford & Sons was on TV he literally stopped in his tracks and came over to watch it with me.  I couldn't stop laughing because this guy who I have to 'fight' to watch TV with me willingly came over when he saw "Pop and Lamont" on the screen.  Men....go figure!

Anyway....back to Thankful Thursday.....

Today, I'm thankful for unexpected acts of kindness.  The hubby did the food shopping on Friday night and he came home with these...

It wasn't an anniversary, or special occasion.  He bought them because he was thinking about me and thought that I'd enjoy them.  I'd take flowers for this reason over flowers for Valentine's Day any day.

A Typical Meal

I have gotten to the point in my eating habits where it's time to change things up.  I am a creature of habit, and it's something that's been with me since I was a little girl.  Heck, my mom even had us on a two week cooking schedule as kids. 

I think it's time to add some side dishes to my meals.

Take, for example, my dinner last night.   

Turkey meatballs, wheat bread and a salad

Where are the other veggies in my life, and why don't I take the time to make them?  Every night I have a main course and a salad and that's pretty much it.  I think it's a laziness thing for me and the fact that the hubby isn't much of a vegetable eater doesn't help.

I think eating more veggies will help with my nighttime snacking habit.  Am I the only one who can eat fruit like it's going out of style but have a hard time fitting vegetables into my life?

Quick Chicken Parm

I love chicken parmesan.  Growing up, we ate it at least once every other week.  In order to lighten it up a bit, I normally skip frying the chicken and bake it instead.

If you want an even faster way to make chicken parm, consider this as an option:

1.  Bread the chicken
2.  Put the chicken (uncooked) into a baking sheet
3.  Pour sauce and cheese on top and bake until cooked through

The result will be this yumminess:

Super Bowl Sunday

Happy Monday!

How many of you watched the Super Bowl last night?  I think this was the first time in a long time that I watched literally 5 minutes of it.  Honestly, the only thing that interests me about it are the commercials, not the actual game. 

Last year,  I made some fun super bowl foods.  While it would've been nice to have a repeat this year, it wasn't meant to be.  The baby was sleeping, so the hubby and I opted to make this our super bowl food....

This was supposed to be vegetarian general tso's chicken, but I ordered from an old menu and got the regular version instead.  Oh was tasty anyway.

Sometimes I like when it snows.....if it gets me out of work or isn't too much so that it causes commute issues.

Sometimes I get a good night's sleep, and that makes me so happy.

Sometimes I look back on life and realize how blessed I am and how grateful I need to be about things.

Sometimes I drink too much coffee during the day, even if it is decaffeinated.

Sometimes I need to sit back and enjoy life more often.

Sometimes I worry about the silliest things.

Sometimes I love breakfast for dinner.

Scrambled eggs?  Yes, please!

Thankful Thursday

Happy Thursday!

Four months ago today, my son was born, and how are we celebrating?  He has a 4 month doctor's visit where he gets 4 shots.....ouch....sorry little one.

Today, I'm thankful for hearty laughs.  You know the ones I am talking about.  The ones where the laugh comes straight from your belly and you just can't stop no matter how hard you try.

The other day, John was in his exersaucer.  It's kind of like a walker without the wheels.  One of the toys on it says colors in English, Spanish and French.  For some reason, when I repeated the colors in Spanish, he let out this hearty belly laugh that I can't get enough of. I took a video of it and I hope you enjoy it as much as I did.

I Don't Need Caffeine

Remember how I needed chocolate yesterday?  Well, today I realized how much I don't need caffeine. 
The hubby, baby and I slept overnight at my mom's house last night.  My mom typically watches the baby on Tuesdays, when my husband works his second job.  Normally, I take the train from her house and pick the baby up after work.  With all of the ice predicted for this morning, we thought it would be a better idea to sleep over rather than risk driving to her house early in the morning. 

When I woke up, I was extremely thankful that we chose to spend the night.  Cars were spinning out all over the place, and when I was walking to the bus stop, I slipped quite a few times.   I forgot to bring my decaf coffee with me and opted to have the caffeinated coffee my mom makes in the morning.  Truth be told, I haven't had caffeinated coffee since I found out I was pregnant over a year ago.
Let me tell you....ever since drinking the coffee, I've been feeling so jittery and shaky.  I'm talking a mile a minute to my co-workers and it's driving me insane!  Note to self: do yourself a favor and skip the caffeinated coffee from now on.

Even though I don't need caffeine, what I can go for is some chicken cutlet.  I don't know what's been up with my food blog pics lately, but they are getting worse instead of better.  I think that's party because I have to rush to take the picture and eat before the baby wakes up.

Chicken cutlet is one of those meals that I could eat almost every night of the week. It's so delicious!

Coffee or tea?  Caffeinated or decaf?

As much as I try to like tea, I just can't handle it.  I'm a spoiled coffee lover, I guess!
