Oven Fried Sesame Chicken

Rain, rain go away. Come again another day. It seems as if it's been a rainy mess this entire week! I'm ready for some sunshine already!

I came across this recipe a few months into starting Weight Watchers. It was a different way to use chicken, and I couldn't wait to give it a try.

Oven Fried Sesame Chicken
2 tabl. low sodium Soy Sauce
4 boneless skinless chicken breast (4 oz each)
3 tabl. sesame seeds
2 tabl. flour
1/4 tsp. ground pepper
1 tabl. reduced calorie margarine, melted

Place soy sauce in a shallow dish, add chicken, turning to coat. Combine; sesame seeds, flour, pepper in a large zip lock bag and shake to combine ingredients. Add chicken to the bag and shake to coat the chicken. Place chicken on a 9 x 13 baking dish that has been coated with cooking spray. Drizzle melted margarine over chicken. Bake in a preheated 400 degree oven for 20 minutes or until chicken is done.

I didn't have any sesame seeds on hand and wasn't about to pay the $4.69 that the grocery store wanted for them.

Out of the oven

They were delicious and moist. I could see this serving as a sort of chinese chicken substitute when served with whole wheat noodles or brown rice.
