Favorite Weekday Meal

The husband and I are on a pretty regular food schedule. It's easier for us to cook a bunch of food on the weekend and throw it in the microwave to eat during the week. We came up with a rotating two week meal plan. Hands down, my favorite meal of the week also happens to be the simplest meal-buffalo chicken salad.

In the mix:

left over buffalo chicken, cut into strips
1 small can of corn
1 can diced tomatoes (undrained)
1 diced pepper
1 bag of salad
